Simple nettle syrup
You will need:
- 1 kg of wild stinging nettle young leaves
- 2.5 liters of water
- 2.5 kg of sugar (on every 500 ml water goes 500 grams of sugar)
Wash and strain nettle leaves and soak them in water. Cook them on a middle temperature for about one hour, adding water to replace the one that evaporated. In the end strain the mixture and add sugar and stir until you get fine syrup. When it is cooled down, pour it in glass bottles and close it well. You can mix up this recipe with berries leaves. Add them in a ratio of 1:1 with nettle leaves.
Nettle, honey, lemon syrup
You will need:
- 400 grams of wild stinging nettle young leaves
- Lemon juice maid out of 6 lager lemons
- 800 grams of sugar
- 5 tablespoons of meadow honey
- 1 liter of filtered water
First, I would like you to know that if you don’t like the idea of drinking syrup with too much sugar, you can always replace it with honey, but you have to replace 300g of sugar with about 1kg of honey. You don’t need to cook the honey, add it to the cooled off syrup. This kind of syrup has a shorter expiration date.
So, let’s start with the directions.
Wash nettle leaves and chop them. Pour water in a pot and put the sugar in. You can even use half brown, half white sugar. Let it cook and stir it occasionally. When it comes to the boiling point, let it boil for about five more minutes. You can remove any foam at the surface of the pot with a spoon.
Put chopped nettle leaves in a ceramic bowl and pour it with sugar syrup. Cover it with plate and press it with some heavier jar or glass. Let it be for 10 minutes. After that you can add lemon juice and honey. At the end strain the syrup and the work is over. Keep it in the sterilized bottles in the cold, dark place. This batch can last you for about six months, even if you drink it regularly.
Mix 1/4 of syrup with 3/4 of water, or even club soda. You can also add ice and a slice of lemon. Enjoy!
