Summer is the best time to enjoy watermelons. But if shaking salt over your watermelon is the most exciting thing you’ve ever done, then prepare yourself for a list of mouthwatering and refreshing ways to enjoy this bulbous summer fruit.

1. Watermelon with cheese and tomato salad

Combine cubed watermelon with quartered tomatoes, and then toss with olive oil with fresh mint and basil. Arrange watermelon and tomatoes on a platter and scatter crumbled feta cheese on top and sprinkle dried oregano.

2. Watermelon pork taco

Prepare the marinade by combining soy sauce, oyster sauce, toasted sesame oil, minced garlic, chopped ginger, minced and seeded serrano chili, red pepper flakes, onion powder and ground pepper in a bowl. Marinate pork tenderloin cut into 1 inch slices for at least an hour.

Meanwhile, put together the salsa by whisking together rice vinegar, sesame oil, soy sauce and olive oil in a large bowl. Gently fold in diced and seeded watermelon, cucumber and avocado.Place salsa in the refrigerator to chill.

Now preheat a grill to medium heat. Take the pork out of the marinade and pat dry. Grill the meat 2 minutes on one side, turn it over and then grill the other side for another 2 minutes. Remove the meat from the heat and let it rest for 3 minutes before cutting into 1/2 inch pieces.

To assemble the taco, fill a large, sturdy romaineheart leaf with pork, top with salsa and enjoy.

3. Watermelon salsa

Combine diced nectarine, minced jalapeño peppers, grated ginger, orange zest, fresh lime juice and sugar in a large bowl. Let it stand for 15 minutes. Then add diced and seeded water melon, chopped cilantro and diced red onion. Toss gently to coat and serve with grilled fish, chicken or steak.

4. Watermelon blended water

Process diced and seeded watermelon and sugar in a blender until smooth. Then pour the mixture through a wire mesh strainer into a pitcher and discard solids. Stir in a little water and chill until ready to serve. Serve over ice.

5. Watermelon in syrup

Mix together equal parts of pineapple juice, honey and lime juice in a large bowl. Add about a tablespoon grey salt and a pinch of ground ginger. Meanwhile, remove seeds from watermelon and cut into cubes. Place water melon in individual bowls and drizzle with the pineapple mixture and serve.

6. Watermelon lime spritzer

Process unseeded and diced watermelon and ice in a blender until liquefied. Slowly add lemonlime flavored soda. This will considerably thin out the mixture so you can add more ice if you want a slushy consistency. Pour into glasses and serve with a lime wedge for garnish.

7. Watermelon split

Place about a cup of fresh blackberries in a bowl and cover with an even layer of sugar. Mix together and then mash with a fork. Let this sit for 20 minutes.

Arrange diced and unseeded watermelon into an” X” at the bottom of a banana split dish. Place a scoop of vanilla ice cream at the center and scatter about two tablespoons blackberry sauce over it. Top with a dollop of whipped cream, cherry and chopped nuts.

8. Watermelon gelatin squares

Puree unseeded and chopped watermelon, sugar, Sambuca liquor and lime juice in a blender until smooth. Pour mixture through a wire mesh strainer into a large pitcher and discard solids. Divide the mixture into three.

Place one part of the mixture in a saucepan and bring to a boil. Meanwhile, put another part of the mixture in a bowl and sprinkle a packet of unflavored gelatin on top. Let this stand for a minute then add the hot watermelon mixture. Stir well until the gelatin has dissolved.

Add the remaining water melon into the bowl. Spray n 8-inch baking pan with cooking spray and pour the watermelon mixture into it. Refrigerate for about 20 minutes or until mixture has thickened.

Arrange mint leaves on top in a row and then gently push them just below the surface.

Return to refrigerator and allow to set for about 4 hours. Unmold the gelatin and then invert onto a cutting board.

Reinvert the gelatin unto another cutting board and then cut into squares.
